Easy Homemade Coconut Nests Recipe Post Preview: Perfect for Easter or Spring, these easy-to-make coconut nest cookies are a darling addition to your dessert. This is a great “kids in the kitchen” recipe.

I know that people have some strong opinions on coconut. It’s right up there with candy corn, black jelly beans, and cilantro. It seems like people either love it or hate it.

I am Team Coconut all the way.

Of course, since this is a recipe that depends almost solely on coconut, you probably already figured that out.

Side note: I’m also Team Black Jelly Bean, in case you’re curious. I’m vehemently opposed to both cilantro and candy corn.

These Coconut Nests will be a darling addition to your Easter or Springtime celebrations, especially with the little “eggs” in the nest. These just sing out “Spring!”

Easy Homemade Coconut Nests Recipe for Spring and Easter

Kids in the Kitchen: Kids who are more experienced in the kitchen may be able to make this alone or with minimal assistance. This is a great recipe for adults to make along with kids. Even very young children can help with making the depressed area for the nest as well as adding “egg” candies to the nest.

Note: There is a printable version of the recipe farther down in the post.

Homemade Coconut Nests Ingredients

  • 3 ½ cups sweetened shredded coconut
  • ¾ cup sweetened condensed milk
  • ½ cup yellow candy melts
  • 1 tsp coconut oil
  • 36 chocolate candy coated egg candies or jelly beans

Other Supplies Needed:

  • Parchment paper
  • Muffin pan

Coconut Nest Cookie Directions

1. Preheat your oven to 350 degrees F.

2. Cut your parchment paper to 12 squares – approximately 3 inches by 3 inches. Line each cavity of the muffin pan with your square parchment paper squares and set aside.

5. Use the back of your second spoon to create an indent in the center of each unbaked coconut nest (macaroon).

6. Bake for 10 to 12 minutes until the edges brown.

7. Remove from the oven and allow to cool.

8. While the coconut nests are cooling, place the candy melts and coconut oil in a microwave-safe bowl and microwave in 20-second intervals until completely melted.

9. Pour melted candy into the center of each coconut nest. Top each one with 3 candy eggs or jelly beans and allow to set.
