While I think traditional cheesecakes taste fine, my preference is always for whipped and soft cheesecake. (Like in this Easy No Bake Strawberry Cheesecake!) I remember as a preteen making no bake cheesecake mixes with one of my friends. It was always such a treat!

With these Chocolate Chip Cookie Cheesecake Bars, you get all the deliciousness of that soft, whipped cheesecake along with the comfort of chocolate chip cookies. What a great combination!

Chocolate Chip Cookie Cheesecake Bars Recipe

Ingredients for Chocolate Chip Cookie Cheesecake Bars

  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tablespoon water
  • 1 teaspoon vanilla
  • Box of Extra Moist Yellow Cake Mix
  • 1 cup chocolate chips
  • 12 oz cream cheese, softened
  • 8 oz. Cool Whip, completely thawed
  • 1/3 cup sugar

Directions for Chocolate Chip Cookie Cheesecake Bars

Steps for Crust/Bottom:

1. Preheat oven to 350 degrees.

2. Grease a 9 x 13-inch cake pan.

3. In a large mixing bowl, mix together vegetable oil, eggs, vanilla, and water until well blended.

4. Add cake mix to your large mixing bowl. Combine all ingredients together by hand until well blended.

5. Fold chocolate chips into the mixture.

6. Spread into the bottom of your pan and bake for approximately 15 minutes or until golden.

7. Allow to cool completely.

Steps for Cheesecake Topping:

1. In a large mixing bowl, add softened cream cheese, Cool Whip, and sugar.

2. Mix on high until smooth. Depending on the thickness of topping that you would like on cookie crust, you may want to make two batches of the cheesecake topping.

3. Spread evenly over the chocolate chip cookie bottom.

4. Refrigerate for 2 to 3 hours before serving.

These can also be lightly garnished on top with some pretty sprinkles (like these white sugar pearls) or mini chocolate chips!
