Rich and Delicious Double Fudge Coca Cola Cake Recipe

Not only is this cake delicious, but there are a couple of other reasons why I love making it. First, it’s made in a jelly roll pan or a cookie sheet that has sides (on all sides). As you can imagine, this means that it makes a lot of cake. This makes it perfect when you need to feed a lot of people – whether for a holiday gather, a potluck, or even individually wrapped pieces for a bake sale. Bonus!

Another reason that I think this Double Fudge Coca Cola Cake is the tops is because it gets better a day or two after you bake it. Sure, you can eat it right away, but it will become even more moist the next day. Since I’m often making it for gatherings, it’s so nice to have something that can be made ahead of time.

We also love making this cake, cutting it up, wrapping the individual pieces, and then freezing them to thaw just a few at a time.

Double Fudge Coca Cola Cake Recipe

Double Fudge Coca Cola Cake Ingredients

Ingredients for Cake:

  • 1 cup Coca Cola
  • 1/2 cup vegetable/canola oil
  • 1 stick butter (= 1/2 cup of butter)
  • 3 tablespoons cocoa powder
  • 2 cups sugar (white)
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda (careful – this is not added in with the other dry ingredients)
  • 1 teaspoon vanilla extract

Ingredients for Frosting:

  • 1 stick (8 tablespoons) butter
  • 3 tablespoons cocoa powder
  • 6 tablespoons cream, milk, or buttermilk
  • 1 teaspoon vanilla
  • 3 3/4 cups (3.75 cups) confectioners (powdered) sugar

Double Fudge Coca Cola Cake Directions

Instructions for Making the Cake:

1. In a sauce pan, bring oil, butter and cocoa powder to a boil.

2. Move to a mixing bowl after items in step one have come to a boil.

3. Mix the sugar, flour, and salt. Pour them into the mixture that you just put in the bowl. Beat well.

4. Add in Coca Cola. Blend well.

5. Add eggs, buttermilk, baking soda, and vanilla. Beat well.

6. Pour into a greased and floured sheet cake pan. (I use an approximately 15-inch cookie sheet that has one inch sides. A jelly roll pan is also a great option.)

7. Bake at 350 degrees for 20 – 25 minutes. Plan to frosting the cake shortly after taking the cake out of the oven.

Instructions for Making the Frosting: 

Important: You should start making the frosting a few minutes before the cake comes out of the oven or just after taking it out of the oven, as you will pour the frosting on the cake when it is still hot/warm.

1. In a saucepan, combine the butter, cocoa powder, and milk. Heat until butter melts.

2. Beat in the remaining ingredients, and pour/spread on the hot cake.

3. All cake to cool before cutting. Store in the refrigerator. (We all prefer to eat the cake cold/cool.)

Ingredients
  

Ingredients for Cake

  • 1 cup Coca Cola

  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda careful - this is not added in with the other dry ingredients
  • 1 teaspoon vanilla extract

Ingredients for Frosting

  • 1 stick 8 tablespoons butter
  • 3 tablespoons cocoa powder
  • 6 tablespoons cream milk, or buttermilk
  • 1 teaspoon vanilla
  • 1/2 - 1 cup pecans chopped (optional - I don't use them)
  • 3 3/4 cups 3.75 cups confectioners (powdered) sugar

Instructions

  • In a saucepan, combine the butter, cocoa powder, and milk. Heat until butter melts.
  • Beat in the remaining ingredients, and pour/spread on the hot cake.
  • Cool cake before cutting.

Notes

The yield on this recipe all depends on how big of pieces you are cutting. I would imagine you could make large pieces and cut 30 pieces. I often cut it so that I get around 40 pieces of cake from the pan.

    Do you taste the coca cola? I can't quite wrap my brain around putting that soda in a cake. But, hey, my husband likes coca cola, so maybe I'll try it.

    This is a GREAT recipe and I’m so glad you posted it. I have now made it SEVERAL times always with great reviews. I have also paired it with a peanut butter frosting with excellent results. The “Keith” of your Keith and Amanda friends is my husbands first cousin. Your friends are GREAT people!!! I am posting my version of this recipe (I just can’t ever leave a recipe alone) on my blog today. Thanks again for sharing this recipe… it has become a stand by for me whenever I am baking for a large crowd.

      I’m so glad that you like the recipe, Heather (and have changed it up to make it faster for when you make it). It is a really awesome recipe for a crowd. It’s also great to cut it up, wrap pieces individually in Saran Wrap, and then freeze them.

      Agreed — Keith and Amanda ARE great people! 🙂 They are a real blessing in our lives. The whole family is just wonderful, as far as I’m concerned. I’ve instructed my children that one of them has to marry into the family somehow. LOL

      Is your husband a first cousin on Marty’s side or Sam’s side?

        The cake was a hit again! Keith is my husband’s cousin on Marty’s side. I actually know Becky better, but Amanda and I were in a Bible study together the year she was pregnant with the twins!

    After cocoa, butter & oil mixture in sauce pan, there is not enough liquid in mixing bowl to combine dry ingredients. I went ahead an added the buttermilk to combine & get mixture incorporated. The remaining steps were followed.
    Used a 9×14 pan, so cook time was extended about 10 minutes. I also used sifted bread flour since it called for baking soda…
    Poked holes so icing could get run into cake & topped with toasted pecan pieces. Awesome moist chocolate cake recipe. I wish a picture would attach…

      I suspect it’s totally fine to add the buttermilk when you did. That’s not how I do it, obviously, but I don’t think that it’s an issue and I’m glad that it turned out so well for you with some of the changes. It sounds like you made it kind of like a poke cake and I bet that was really tasty!

      With the directions as written, when you add the oil, butter, and cocoa powder to the dry ingredients, it ends up being a damp crumbly mixture at that point and then it gets fizzy and more liquid when you add the Coca Cola in after that.
