Soft Pumpkin Chocolate Chip Cookies with Pecans Recipe Post Preview: Enjoy the taste of fall with these easy pumpkin chocolate chip cookies featuring pecans for extra taste and texture.


One of the things I love about fall is all of the wonderful fall foods. Of all of those fall flavors, pumpkin is my favorite.

Even when the weather was still stuck in the 90s, I was gladly having pumpkin spice added to my chai tea. I was also buying pumpkin pie, apples, and caramel dip at the grocery store. Fall foods are just fabulous.

Now that our weather is finally starting to get cooler, I thought it was the perfect time to share this recipe for Soft Pumpkin Chocolate Chip Cookies with Pecans.

Soft Pumpkin Chocolate Chip Cookies with Pecans Recipe

Ingredients for the Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, firmly packed
  • 2 large eggs
  • 15 ounce can of pumpkin puree (make sure this is called pumpkin puree or pure pumpkin and not something like pumpkin pie filling)
  • 1 teaspoon vanilla
  • 5 cups all-purpose flour
  • 2 teaspoon cinnamon
  • 1 1/2 teaspoon pumpkin pie spice – If you don’t have pumpkin pie spice, here is how to make your own pumpkin pie spice by combining other spices that you might have on hand.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups chocolate chips
  • 1 cup chopped pecans, optional (these add a really great flavor and texture though)

Directions for Making Pumpkin Chocolate Chip Cookies

1. Preheat oven to 375 degrees.

2. Beat the butter with a handheld or stand mixer until creamy. Then, add in the sugars and beat until well mixed.

3. Add in both eggs, pumpkin puree, and vanilla. Mix again until ingredients are well combined.

4. In a separate mixing bowl, mix all dry ingredients (except the chocolate chips and nuts). Slowly incorporate the combined dry ingredients into the wet ingredients, mixing as you add.

5. Add the chocolate chips and pecans to your dough. You may need to make by hand at this point, depending on the strength of your handheld or stand mixer.

6. Form dough into 2 inch balls and place on cookie sheet. Press the dough balls down (similar to how you might do to peanut butter cookie dough) to make flat cookies. If you do not flatten the dough, they will be a very puffy cookie and may not bake properly.

7. Bake for 8-10 minutes or until lightly browned.

8. Remove from oven and let cool for a few minutes on the baking sheet before putting them on a wire rack to cool.

Makes 2 ½ dozen cookies.
