Peep Rice Krispie Treat Layered Dessert Recipe

I’m pretty sure that one of the most perfect desserts is Rice Krispie treats.  They are one of my absolute favorites.  So, for a fun Spring twist (perfect for making as an Easter treat), we decided to get a little wild and make a Peep Rice Krispie Treat Layered Dessert.  Even though it’s a rolled dessert, we decided to call it layered because of the way it came out.  Noah, however, said he thought it should be called a casserole.  Crazy teenager!

Now, just be prepared.  This is a sweet dessert.  This is not an “eat multiple helpings dessert.”  This is an “I really should brush my teeth after this meal” dessert.

Peep Rice Krispie Treat Layered Dessert Recipe

Ingredients

  • 3 tablespoons of butter
  • 3 – 3 1/2 packages of Peeps (3 3/8 oz size package) – Three packages would probably be enough, but if you want it more gooey you might actually need closer to 3 1/2 packages.  
  • 6 cups of Rice Krispie Cereal
  • Vanilla frosting (here’s my recipe for homemade vanilla frosting, which is what I used with my preparation of it)
  • Sprinkles or Coarse Sugar (optional)

Directions

While you can do a stove top melting of the butter and Peeps, I went with the microwave route.

Note: Prior to beginning, prepare a cookie sheet (with sides) or jelly roll pan with cooking spray and/or waxed paper.  You will need to be able to pull a sheet of prepared Rice Krispie Treats out of it.  I used both cooking spray and waxed paper, just to be on the safe side.

1. Melt your butter in a large microwavable bowl in the microwave for approximately 45 seconds.

2. Pull your Peeps apart and add them to the microwaveable bowl.  Toss the Peeps in the butter to attempt to coat them with butter.

3. Put the bowl back in the microwave and head for 1 1/2 minutes.  Stir the Peep marshmallow mixture.  If it’s not yet melted, heat for another 30 seconds and stir again.  However, once you mix the mixture after that first 1 1/2 minutes, you will likely find that your mixture is smooth and melted.

4. Add the Rice Krispies to the melted Peep mixture.  Stir until coated.

(Disclosure: Stirring them up is my least favorite part.  I just want a dessert, not an upper body work out.  Oh, and do you see those little black specks?  Those are Peep eyes that apparently don’t melt.  Poor Peeps.)

5. Pour combined mixture into your prepared cookie sheet and flatten your mixture into an even layer.  I recommend just using your hands to do this, and have someone handy to occasionally put more cooking spray on your hands.

Allow to cool and harden.  I even popped mine in the refrigerator for a bit to help it along.

6. After your treats have hardened, pull the whole sheet out of your cookie sheet.  If you really just want some Peep Rice Krispie Treats, you could just stop here, cut them apart, and enjoy them.  However, if you’re going for the layered dessert, keep going.

7. Spread your vanilla frosting on your treat.  Then, add sprinkles or coarse sugar for a fun decoration, if desired.

8. Start at one short end and loosely roll the treat up to make a spiral.  Add more sprinkles or coarse sugar to the seam, if desired.

9. Slice the layered dessert and serve.

    I tried making rice krispie treats for the first time a few days ago. Upon cooling, they became hard as a rock. Any suggestions on what went wrong?

      Hmmm…I’m not really sure. I would wonder if your marshmallows were fresh enough. Also, maybe you hadn’t used quite enough marshmallow or maybe too many Rice Krispies.

    This dessert is perfect for little kids at home. The colour and the design of the peep rice krispie looks so tempting. I am not good at cooking but I will definitely try this recipe. I am sure they gonna love it. Thank you Angie for the great dessert idea!
