S’mores Rice Krispie Treats

Ever since I was a little girl, one of my very favorite desserts to have has been Rice Krispie Treats. It should come as no surprise then, that I always try to have Rice Krispie cereal and marshmallows on hand, just in case I need an easy, delicious, no fuss treat for my kids, for their friends, or to take along with us to a function.

While I’m usually a Rice Krispie Treat purist, preferring the traditional treat over dressed up varieties, these S’mores Rice Krispie Treats are delicious and a perfect summertime dessert (and a great way to make the most of summer)!

Not only do they feature that quintessential summertime s’mores flavor, but they’re perfect for a busy summertime schedule because they can impress all those kids that are probably playing in your backyard, while being quick to throw together and only requiring five ingredients.

Easy to prepare and deliciously inspired by summer, these S'mores Rice Krispie Treats are sure to please your family and friends.

Wait! S’mores Rice Krispie Treats

Ingredients:

  • 6 cups Rice Krispies Cereal
  • 16 oz bag of miniature marshmallows
  • 3 tablespoons butter
  • 4 (or more) sheets of graham crackers
  • 3 (or more) full-sized milk chocolate bars

Directions:

While you can do a stovetop melting of the butter and miniature marshmallows, I went with the microwave method to make this quicker to put together, which is especially great for busy summer days.

1. Prepare a 13×9 pan by coating it with a cooking spray. I also like to measure out all of my Rice Krispies at this point and put them in a large bowl together. Set these both aside for now.

2. Prepare your chocolate bars and graham crackers. I finely chopped one chocolate bar, and then more coarsely broke up the remaining chocolate bars. For the graham crackers, I put them all in a plastic baggie and crushed them. I left some of them in chunks, and others ended up as graham cracker crumbles. Set these both aside for now as well.

3. Melt your butter in a large microwavable bowl in the microwave for approximately 45 seconds.

4. Add approximately 12 oz of miniature marshmallows to the microwaveable bowl.  Toss them in the butter to coat them.

5. Put the bowl back in the microwave and heat for approximately 90 seconds.  Stir the marshmallow mixture. If it’s not yet melted, heat for another 30 seconds and stir again. However, once you mix the mixture after that first 1 1/2 minutes, you will likely find that your mixture is smooth and melted.

6. Add the Rice Krispies to the melted butter and marshmallow mixture. Stir until coated.

7. Add the finely chopped chocolate bars, as well as a couple of handfuls of the more finely ground graham crackers into the Rice Krispie marshmallow mixture, and stir until combined.

8. Pour combined mixture into your prepared 13×9 pan and flatten your mixture into an even layer. I always just put a little bit of cooking spray on my hands, and then flatten the mixture with my hands. Set this all aside for a few minutes.

9. Turn on your oven’s broiler and allow it to heat while you place miniature marshmallows on a cookie sheet. You can decide how many you would like for topping your Rice Krispie Treats. You might even want a few to pop in your mouth!

10. Once your broiler is hot enough, place your miniature marshmallows under it. Keep an eye on these so that you’re able to pull them out once they get to your desired golden color. This should only take a couple of minutes or even much less, so keep a close watch on them the entire time.

11. Pull your now toasted marshmallows out from under the broiler.

12. Sprinkle your coarsely chopped chocolate bars on top of Rice Krispie Treats (still in the 13×9 pan), and put your Rice Krispie Treat pan under it for just a minute or so, in order to melt your chocolate bar pieces.

13. Remove your Rice Krispie Treats from under the broiler and spread the now melted chocolate all around on the top of them. Immediately place your toasted miniature marshmallows and graham cracker pieces onto the melted chocolate.

14. Allow to cool and enjoy! {Printable recipe is near the bottom of this post}

Notes

    We are doing as much as we can as a family of three before we have our baby in October! Lots of fun activities and events going on during the weekends. We are going to a waterpark this weekend, i’m excited to see how my son reacts to that!

    So far summer hasn’t officially started for one of my kids since she opted, voluntarily, to do 2 weeks of summer school. Usually we spend a ton of time outdoors and at the beach during the summer so once school is out completely for her that’s where we’ll be.
