Maple Pumpkin Steel Cut Oats

  • 1/4 cup maple syrup
  • 3/4 cup pumpkin puree not pumpkin pie filling
  • 3 1/2 cups water
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup oats


  • In a saucepan over medium heat, combine syrup, pumpkin, water, salt, and cinnamon.
  • Bring to a simmer.
  • Stir in oats and continue to simmer, stirring occasionally, until tender. 25-30 minutes.
  • Serve with a little extra maple syrup and a dash of cinnamon. A splash of milk or cream would be delicious.


This recipe refrigerates beautifully. I highly recommend doubling the batch.
