Ingredients

  • 1 cup of butter 2 sticks, softened
  • 2 tablespoons powdered sugar
  • ½ cup fresh strawberries

Instructions

  • In a medium mixing bowl, beat the softened butter with an electric mixer on medium speed for approximately 30 seconds, until smooth and creamy.
  • Add the powdered sugar to the butter and mix with the electric mixer until well combined.
  • Add the strawberries to your sweetened butter mixture. Use a fork or potato masher to crush the strawberries into your butter. Do not completely crush all of the berries; some can remain whole (or mostly whole) for added texture in the butter. You can decide on your preference for this and go with it.
  • Use a fork to mix the berries through the butter.
  • Spoon the whipped strawberry butter into the shape of a log in the center of a sheet of wax paper. The log should be about 8 inches long.
  • Wrap the wax paper around the butter log and twist the ends to close.
  • Refrigerate the strawberry butter log for at least 3 hours or overnight before serving.

Notes

If you have an overabundance of other berries, you can actually use those instead. You could make Whipped Blackberry Butter, Whipped Blueberry Butter, or Whipped Raspberry Butter, for example. Just use the berries of your choice in the recipe instead of strawberries. Or, get a little wild and use a couple of types of berries!
