Healthy Almond Butter Chocolate Chip Cookies
These Healthy Almond Butter Chocolate Chip Cookies are healthy enough to eat almost every day!
  • 1 cup whole-wheat flour
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 cup almond butter
  • ¾ cup pure maple syrup
  • ½ cup mashed sweet potato
  • ¼ cup coconut oil, melted
  • 1 tbsp vanilla
  • ¾ cup chocolate chips
  1. Preheat oven to 350 degrees.
  2. In a small bowl, whisk the whole-wheat flour, the all-purpose flour, and the salt together. Set aside.
  3. In a medium bowl, combine almond butter, maple syrup, sweet potato, coconut oil, and vanilla. Mix well.
  4. Add the flour mixture to the almond butter mixture and mix.
  5. Stir in the chocolate chips.
  6. Scoop cookie dough onto cookie sheet.
  7. Bake for 8-10 minutes or until golden brown.
