No Bake Strawberry Cheesecake

For the crust
  • 1½ cups crumbs from graham crackers, shortbread cookies or ginger snap cookies
  • ⅓ cup white sugar
  • 6 Tbsp. butter, melted
For the filling
  • 16 oz cream cheese at room temperature ( 2 boxes)
  • ½ cup sugar
  • 4 Tbsp. lemon juice
  • 1 cup whipping cream
  • ⅛ tsp. salt
  • 1 pound of fresh strawberries
  1. Preheat oven to 375 F.
  2. Mix crumbs, sugar, and melted butter until well blended.
  3. Starting at the sides, use your fingers to press the mixture into a pie plate.
  4. Bake in preheated oven for 7 minutes until the crust starts to brown lightly. Set aside to cool for about 1 hour.
  5. After the shell is cool, put cream cheese, sugar, lemon juice, salt and whipping cream into a stand mixer and beat on high for about 45 seconds. Mixture will be fluffy and should be mostly free of lumps.
  6. Spread filling into pie shell. Slice strawberries and arrange on the top as desired.
  7. Note: To make strawberries more heart shaped cut a notch a small triangle into the stem end of each slice.
