Homemade Energy Balls
Recipe type: Breakfast
  • 1 cup oatmeal
  • 1 cup coconut
  • ½ cup peanut butter
  • ½ cup ground flax seed
  • ¼ cup honey or 100% maple syrup
  • ½ cup mini chocolate chips
  • 1 tsp vanilla
  1. Using a hand or stand mixer, mix all ingredients together in a large bowl.
  2. Then roll into 1" diameter balls.
  3. Refrigerate in a sealed container for up to 1 week.
  4. If you'd prefer, you can press the mixture into a small flat pan. Cut into squares with a thin, sharp knife after being refrigerated for several hours.
